This hand forged Chinese cleaver is the one knife many cooks reach for all day. The 20 cm blade stands 9.8 cm tall, so your knuckles clear the board and the flat face doubles as a scoop to carry chopped food to the pan. The upper part of the blade keeps its dark, hammered forge finish while the lower half is ground bright to a keen edge, a look that also helps sliced food fall away. A riveted wood handle gives a secure grip, and at 492 g the knife has enough weight to glide through onions, cabbage, squash and boneless meat.
Why you will love it
- 20 cm hand forged blade in 5Cr15 steel, 9.8 cm tall and 2.8 mm thick
- Hammered forge finish on the upper blade, bright ground edge below
- Tall, flat blade that clears your knuckles and scoops food off the board
- Riveted dark wood handle with a full, secure grip
- 492 g of balanced weight that does the work for you
How to use it
- Slice and chop vegetables with a forward rocking push, letting the weight do the work
- Thin slice boneless meat and fish for stir fries and hot pot
- Flatten garlic and ginger with the side of the blade
- Scoop prepared food onto the blade and carry it to the wok
- Keep it for slicing: use a heavy bone cleaver for bones and frozen food
Care
Wash by hand in warm soapy water and dry the blade and handle straight away. Keep it out of the dishwasher. A light wipe of cooking oil on the blade now and then keeps it looking good. Cut on a wood or plastic board and hone regularly.
